Last night my husband made chicken lo mein, which happens to be one of my favorite foods. The recipe is from here and is super easy to make which is great for a weeknight dinner and there are always leftovers for the next meal!
Ingredients
Sauce (next time we make this we are going to double the sauce)
3 Tablespoons of low sodium soy sauce
3 tables hoisin sauce
1 teaspoon sesame oil
Lo Mein
1 package of Lo Mein noodles
2 teaspoons olive oil
1 teaspoon sesame oil
1.5 tablespoons of minced garlic
1 lb chicken
1 cup shredded carrots
1 cup snow peas
3 cups fresh spinach
Steps:
1. Whisk the sauce ingredients together in a small bowl and set aside.
2. Boil water in a large pot. Add the lo mein noodles and cook until soft and drain the noodles.
3. In a pan add olive and sesame oils over medium heat. Cut up the chicken. Once the oil is hot add the garlic and chicken. Stir constantly until the chicken is fully cooked and remove from the pan.
4. Add the carrots and snow peas to the pan and cook until tender. Add the spinach, noodles, chicken, and sauce to the pan and stir until the spinach has wilted.
5. Enjoy!
